Good Morning Jacks
TIP
This recipe makes around 4 - 5 man-sized flapjacks, or you can add less mixture to make more, smaller sized jacks.
SERVES 2
- 1 ½ cups self raising flour
- 1 tsp baking powder
- 1 ½ tsp Golden Life Turmeric Blend
- 2 tablespoons castor sugar
- Pinch of salt
- 2 eggs, lightly beaten
- 250ml milk
- 100g butter, whipped with electric beater or wooden spoon
- Butter or oil for frying
- Maple syrup or honey to serve
- Sift the flour, baking powder, sugar, and salt into bowl and make a well in the center
- Mix together the eggs, milk and butter in a jug and pour into the well at once, whisking to form a smooth batter
- Cover bowl with plastic and set aside for 20 minutes at room temperature
- When you’re ready to eat, heat a frying pan and brush lightly with melted butter or oil
- Pour ¼ cup batter in pan and swirl to create a flapjack about 10cm in diameter
- Cook over low heat for 1 minute or until golden brown. Turn over flapjack and cook the other side for about 10 seconds
- Transfer to plate and keep warm. Serve stacked, warm or cold with fruit and maple syrup.
