Good Morning Jacks

TIP

This recipe makes around 4 - 5 man-sized flapjacks, or you can add less mixture to make more, smaller sized jacks.


SERVES 2

  • 1 ½ cups self raising flour
  • 1 tsp baking powder
  • 1 ½ tsp Golden Life Turmeric Blend
  • 2 tablespoons castor sugar
  • Pinch of salt
  • 2 eggs, lightly beaten
  • 250ml milk
  • 100g butter, whipped with electric beater or wooden spoon
  • Butter or oil for frying
  • Maple syrup or honey to serve

  1. Sift the flour, baking powder, sugar, and salt into bowl and make a well in the center
  2. Mix together the eggs, milk and butter in a jug and pour into the well at once, whisking to form a smooth batter
  3. Cover bowl with plastic and set aside for 20 minutes at room temperature
  4. When you’re ready to eat, heat a frying pan and brush lightly with melted butter or oil
  5. Pour ¼ cup batter in pan and swirl to create a flapjack about 10cm in diameter
  6. Cook over low heat for 1 minute or until golden brown. Turn over flapjack and cook the other side for about 10 seconds
  7. Transfer to plate and keep warm. Serve stacked, warm or cold with fruit and maple syrup.
